Crispy Chocolate Chip Cookie

Jump to Recipe Print Recipe

A crispy chocolate chip cookie offers a satisfying crunch that sets it apart from softer variations. This recipe uses a specific ratio of melted butter, granulated sugar, and a touch of corn syrup to encourage the dough to spread and crisp up in the oven. The result is a thin cookie with golden edges and a firm snap.

You can mix the dough and have these cookies baking in about 15 minutes. There is no need to chill the dough before baking. The loose, batter-like consistency is exactly what you want for a flat, crunchy finish.

Why is Crispy Chocolate Chip Cookie a Must-Try?

Melted butter encourages the cookies to spread out thin while baking.

Corn syrup helps create a brittle, crunchy texture that lasts for days.

Tapping the hot baking sheet on the counter deflates the cookies for a flat shape.

Ingredients for Crispy Chocolate Chip Cookie

• Unsalted butter: Melt the butter and let it cool slightly so it does not cook the egg when mixed.

• Light corn syrup: This is the key ingredient for a crunchy texture. Golden syrup works as a direct substitute.

• Granulated sugar: Using a higher ratio of white sugar to brown sugar helps the cookies crisp up rather than stay soft.

• Semisweet chocolate chips: Standard chips work well, but you can use mini chocolate chips for a more even distribution.

• Milk: Any type of milk will work here to add a small amount of moisture to the dough.

Exact quantities are in the recipe card below.

How to Make Crispy Chocolate Chip Cookie

Step 1: Mix the dry ingredients

Whisk the flour, baking soda, and salt in a bowl. This ensures the leavening agent is evenly distributed throughout the dough.

Step 2: Combine the wet ingredients

Beat the melted butter, sugars, and corn syrup until smooth. Add the egg, milk, and vanilla, mixing vigorously to create a cohesive base.

Step 3: Form the dough

Gently stir the dry mixture into the wet ingredients. Fold in the chocolate chips. The dough will feel sticky and look a bit like thick cake batter.

Step 4: Bake and cool

Scoop the dough onto parchment-lined sheets with plenty of space between them. Bake until golden brown, tap the pan on the counter, and let them cool on a wire rack.

What to Serve with Crispy Chocolate Chip Cookie

Serve these crunchy cookies with a cold glass of milk or a hot cup of black coffee.

Expert Tips for Crispy Chocolate Chip Cookie

Tapping the pan on the counter right after baking helps the cookies settle and creates a flatter, crunchier texture.

Baking one sheet at a time ensures even heat distribution and prevents the cookies from baking unevenly.

For food safety, baked goods containing raw eggs should reach an internal temperature of 160°F (71°C).

How to Store and Freeze Crispy Chocolate Chip Cookie

Store the cooled cookies in an airtight container at room temperature for up to 3 days. You can freeze the baked cookies in a freezer-safe bag for up to 2 months. To reheat, place them in a 350°F (175°C) oven for 3 minutes until warm.

Crispy Chocolate Chip Cookie Recipe FAQs

Why are my cookies soft instead of crispy?

Measuring the flour incorrectly or underbaking the cookies can lead to a softer texture. Make sure to bake them until they are flat and golden brown.

Can I chill the dough before baking?

You can chill the dough, but it is not necessary for this recipe. Chilling may cause the cookies to spread less, resulting in a slightly thicker cookie.

Why do I need to tap the pan on the counter?

Tapping the pan forces the puffed cookies to deflate immediately. This helps them cool into a thin, flat shape with a crunchy texture.

Ingredients

  • 1 1/3 cups all-purpose flour 169 g
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 1/2 cup unsalted butter melted and cooled, 113 g
  • 1/2 cup granulated sugar 100 g
  • 1/3 cup packed light brown sugar 67 g
  • 2 tablespoons light corn syrup
  • 1 large egg room temperature
  • 1 tablespoon milk
  • 2 teaspoons vanilla extract
  • 1 cup semisweet chocolate chips 170 g

Instructions

  • Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • Whisk the all-purpose flour, baking soda, and fine sea salt together in a medium bowl.
  • Combine the melted butter, granulated sugar, light brown sugar, and light corn syrup in a large bowl. Beat vigorously with a spatula until the mixture is uniform.
  • Add the egg, milk, and vanilla extract to the butter mixture. Beat vigorously again until smooth.
  • Stir the dry ingredients into the wet ingredients gradually until just combined. Fold in the semisweet chocolate chips gently. The dough will be loose and sticky.
  • Scoop 1 1/2-tablespoon portions of dough onto the lined baking sheets. Space the dough balls at least 2 1/2 inches apart to allow for spreading.
  • Bake one sheet at a time for 12 minutes, rotating the pan halfway through. The cookies are done when they are flat and golden brown. For food safety, baked goods containing eggs should reach an internal temperature of 160°F (71°C).
  • Remove the baking sheet from the oven and tap it firmly against the counter to deflate the cookies.
  • Cool the cookies on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
