Cooking Instructions

  • Season the chicken thighs generously with salt, pepper, onion powder, garlic powder, smoked paprika, fresh thyme, and chopped rosemary.
  • Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken thighs skin-side down and sear until golden brown, about 5-7 minutes.
  • Flip the chicken and sear the other side for another 5 minutes.
  • Remove the chicken from the skillet and set aside. In the same pan, add the sliced red onion and Honeycrisp apples. Sauté until slightly softened, about 3-4 minutes.
  • Stir in salted butter, apple cider, chicken broth (or white wine), Dijon mustard, and minced garlic. Scrape the bottom of the pan.
  • Return the chicken to the skillet, ensuring it is well-coated. Transfer the skillet to the preheated oven at 400°F and roast for 25-30 minutes.
  • Let the chicken rest briefly, then simmer the sauce on the stovetop if desired for a thicker consistency.

Notes

Serve warm with crusty bread or mashed potatoes to soak up the sauce.
