Cooking Steps

  • Season the chicken thighs generously with salt, pepper, onion powder, garlic powder, smoked paprika, fresh thyme, and chopped rosemary.
  • Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken thighs skin-side down and sear until golden brown, about 5-7 minutes. Flip and sear the other side for another 5 minutes.
  • Remove the chicken from the skillet and set aside. In the same pan, add the sliced red onion and Honeycrisp apples. Sauté until they become slightly softened, about 3-4 minutes.
  • Stir in the salted butter, apple cider, chicken broth (or white wine), Dijon mustard, and minced garlic. Scrape the bottom of the pan.
  • Return the chicken to the skillet, coating it well in the sauce. Transfer the skillet to the preheated oven at 400°F and roast for 25-30 minutes until cooked through.
  • Remove from the oven and let it rest for a moment. Simmer the sauce on the stovetop for extra thickness if desired.

Notes

Serve with crusty bread or mashed potatoes to soak up the sauce.
