Whisk together olive oil, chili powder, cumin, garlic powder, lime juice, salt, and pepper in a separate bowl.
Pour the seasoning over the shrimp and vegetable mix, tossing gently to coat.
Spread the mixture in a single layer on the prepared baking sheet.
