Ingredients
  

For the Chicken

  • 4 pieces Chicken Breasts Opt for thighs for a juicier texture.
  • 2 tablespoons Olive Oil Substitute with avocado oil for high-heat grilling.
  • 2 pieces Fresh Lemons Use fresh zest for the best aroma.
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

For the Marinade

  • 1 cup Fresh Herbs (e.g., rosemary, thyme, parsley) Feel free to swap in sage or oregano.

For the Vegetables

  • 2 pieces Zucchini Other summer squash can also be used.
  • 2 pieces Bell Peppers Any variety of bell peppers is great!
  • 1 cup Cherry Tomatoes Watch closely while grilling to avoid overcooking.

Instructions
 

Marination and Grilling

  • In a bowl, mix the juice from fresh lemons, olive oil, chopped herbs, salt, and pepper. Let your chicken marinate for 20 minutes to 2 hours.
  • While the chicken marinates, chop the zucchini and bell peppers, and prepare the cherry tomatoes. Toss in olive oil, salt, and pepper.
  • Set your grill to medium-high heat and clean the grates thoroughly.
  • Place the marinated chicken on the hot grill. Cook for 6-8 minutes on each side until fully cooked and golden brown.
  • Add the prepared vegetables to the grill and cook for about 5-7 minutes, turning occasionally.
  • Once grilled, let the chicken rest for about 5 minutes and serve warm, topped with fresh lemon juice.

Notes

Optional: Garnish with additional fresh herbs for a burst of color.
