Ingredients
  

For the Roast

  • 2-3 pounds Chuck Roast Choose a cut with good marbling for tenderness.

For the Onion Mixture

  • 3 cups Sliced Onions Shallots can add a milder flavor.

  • 1 tsp Dried Thyme Fresh thyme is a fantastic alternative.
  • 1 tsp Dried Rosemary Fresh rosemary can be used instead.

For the Sauce

  • 10.5 ounces Condensed French Onion Soup Opt for low-sodium options if necessary.
  • 2 tbsp Vegetable Oil Feel free to swap with olive oil.
  • 2 tbsp Unsalted Butter Optional, enhances the gravy's richness.

Preparation

  • In a bowl, combine sliced onions, minced garlic, beefy onion soup mix, dried thyme, and rosemary. Toss until well coated.
  • Lightly spray the slow cooker insert with cooking spray. Add half of the onion mixture to the bottom.
  • Heat vegetable oil in a skillet over medium-high heat. Sear the chuck roast on both sides until golden brown, approximately 4-5 minutes per side.
  • Place the seared roast on top of the layered onions. Pour the remaining onion mixture over the roast, and then pour the condensed French onion soup on top.
  • Top the roast with unsalted butter, cover the slow cooker, and set it to cook on low for 6-8 hours or high for 4-6 hours.
  • Once cooked, carefully remove the roast from the slow cooker and shred it using two forks.
  • In a saucepan, mix a cornstarch slurry using some of the cooking liquid to thicken it into a gravy.
  • Return the shredded meat to the slow cooker, mixing it back with the gravy to coat every piece.

Notes

Serve with creamy mashed potatoes or buttered egg noodles for a comforting touch.
