How to Make Mediterranean Chicken Gyros

  • In a mixing bowl, whisk together olive oil, minced garlic, lemon juice, dried oregano, ground cumin, paprika, salt, and pepper. Add chicken breast, ensuring it is well-coated. Cover and refrigerate for at least 1 hour (or up to 24 hours for deeper flavor).
  • In another bowl, blend Greek yogurt, crumbled feta, grated cucumber, fresh dill, mint, lemon juice, salt, and pepper. Mix well and chill in the refrigerator until ready to serve.
  • Preheat your grill or grill pan to medium-high heat. Grill the marinated chicken for 6-7 minutes on each side, until it’s nicely charred and cooked through. Allow the chicken to rest for 5 minutes before slicing into strips.
  • On the grill, lightly toast pita bread or flatbreads for about 1 minute on each side until warmed and pliable.
  • Lay the sliced chicken into the warm pita, add a generous dollop of tzatziki and sprinkle with sliced red onion, chopped tomatoes, cucumbers, and lettuce. Roll it up and enjoy every delicious bite!
