For the Pasta Base

  • 8 ounces Pasta (of choice) Go for gluten-free if needed.

For Garnishing

  • 2 tablespoons Fresh Herbs (Parsley or others) Substitute with any favorite herb.
  • 3 tablespoons Nutritional Yeast (Optional) Adds a cheesy flavor without dairy.

  • Cook the pasta according to the package instructions until al dente. Drain the pasta, but reserve a small cup of pasta water for later.
  • In a large skillet, heat the vegan butter or oil over medium heat. Add the minced garlic and sliced bell pepper, stirring frequently for about 1 minute until fragrant.
  • Whisk together the plant-based milk and cornstarch in a bowl until smooth. Carefully pour this mixture into the skillet, stirring to combine.
  • Simmer the sauce for a few minutes until it thickens, then add in the lemon juice and hot sauce, if using. Gently fold the cooked pasta into the creamy mixture.
  • Adjust the seasoning with sea salt and black pepper. If the sauce is too thick, add a splash of the reserved pasta water. Garnish with nutritional yeast and fresh herbs just before serving.
