For the Sauce

  • 2 tablespoons Olive Oil Or any light cooking oil
  • 2 cloves Garlic (minced) Freshly minced
  • 1 teaspoon Red Chili Flakes Optional
  • 4 ounces Fresh Spinach Or frozen spinach
  • 14 ounces Artichoke Hearts Canned or fresh
  • 8 ounces Cream Cheese Or mascarpone or ricotta
  • 1 cup Milk or Cream Plant-based milk for dairy-free option
  • 1/2 cup Parmesan Cheese Or nutritional yeast for dairy-free
  • 1 teaspoon Lemon Zest Optional

Directions

  • Boil salted water in a large pot and cook the pasta until al dente, about 8-10 minutes. Save ½ cup of the pasta water before draining the rest.
  • Sauté olive oil in the Instant Pot on the sauté setting. Add minced garlic and red chili flakes, cooking for about 1 minute until fragrant and golden.
  • Add fresh spinach to the pot, stirring until wilted, then gently mix in the artichoke hearts. Season with salt and pepper to taste.
  • Lower the heat, then add cream cheese, mixing until melted. Gradually stir in milk or cream, creating a smooth and creamy sauce.
  • Incorporate Parmesan cheese until fully melted and combined. If desired, add lemon zest to brighten the flavor profile.
  • Toss the drained pasta with the creamy sauce, adding reserved pasta water as needed to achieve your preferred thickness.
  • Serve hot, garnished with additional Parmesan, fresh herbs, or even toasted pine nuts for a delightful crunch.
