  • 2 medium shallots Onions can substitute.
  • 1 stalk celery
  • 4 cloves garlic
  • 1 teaspoon sage Can substitute with thyme or basil.
  • 1/4 cup all-purpose flour Use cornstarch for gluten-free alternative.
  • 1 cup dry white wine Sauvignon Blanc is recommended.
  • 2 cups chicken stock Homemade or store-bought options work well.
  • 1 cup cream Can use half-and-half for lighter version.

For the Sides

  • 1 pound baby yellow potatoes Regular potatoes can substitute.
  • 1/4 cup fresh parsley Optional for garnish.

How to Make White Wine Braised Chicken

  • Preheat your oven to 325°F (163°C).
  • Season the chicken with half of the kosher salt and black pepper. In a large pot, melt salted butter over medium heat, then brown the chicken pieces until golden brown, about 5-7 minutes per side.
  • Sauté mushrooms, shallots, celery, and garlic in the same pot. Stir frequently until the veggies are tender and fragrant, which should take about 4-5 minutes.
  • Sprinkle all-purpose flour over the sautéed vegetables and mix well. This will help thicken your creamy sauce. Then, deglaze the pot by adding dry white wine, scraping up delicious bits from the bottom.
  • Combine chicken stock and bring the mix to a gentle simmer. Add halved baby yellow potatoes, which will soak up all that rich flavor.
  • Place the browned chicken back on top of the mixture, covering it loosely with a lid or foil.
  • Roast in the oven for 40-45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  • Rest the chicken for 10 minutes after cooking before serving.
