Directions

  • Start by washing and cubing the Yukon Gold potatoes into bite-sized pieces.
  • In a large bowl, toss the cubed potatoes with olive oil, salt, pepper, paprika, garlic powder, chopped onions, and bell peppers until they are well-coated in the seasonings.
  • Carefully transfer the seasoned potato mixture into your crockpot, spreading it out evenly.
  • Cover and cook on low for 6 hours or high for 3 hours.
  • After the cooking time, check if the potatoes are fork-tender and golden brown.
  • Once ready, serve the potatoes as they are or top with fresh herbs or cheese.
