How to Make Slow Cooker Leg of Lamb

  • Begin by preheating a skillet over medium-high heat. Sear the leg of lamb on all sides until it develops a beautiful golden brown crust, about 4-5 minutes per side.
  • Take a sharp knife and make small slits all over the lamb. Insert slivers of fresh garlic into these slits.
  • Generously rub the leg of lamb with salt, pepper, and fresh rosemary.
  • In your slow cooker, place a layer of chopped onions, carrots, and optional celery at the bottom.
  • Carefully position the seasoned leg of lamb on top of the bed of vegetables.
  • Gently pour the beef or chicken broth around the lamb.
  • Cover the slow cooker and set it to cook on low for 6-8 hours or high for 4-5 hours.
