Preparation

  • Blend cottage cheese until smooth and creamy. Mix with oat flour, maple syrup, baking powder, and cinnamon until thick.
  • Mix cinnamon and sweetener in a bowl for the swirl.
  • Grease a loaf pan and pour half the batter, spreading evenly.
  • Sprinkle half of the cinnamon mixture over the batter.
  • Add the remaining batter and top with the rest of the cinnamon mixture, swirling gently.
  • Preheat oven to 350°F and bake for 45-50 minutes, checking with a toothpick for doneness.
  • Cool in the pan for at least 10 minutes before transferring to a wire rack. Optionally glaze.

Notes

For best results, let the bread cool fully before slicing to avoid crumbling. Store wrapped in plastic for up to 5 days.
