For the Phyllo Dough

  • 1 package Phyllo dough Ensure it's fully thawed if frozen.
  • 1/2 cup Melted butter or ghee Substitute with oil for a dairy-free option.

How to Make Air Fryer Feta Rolls

  • Chop the fresh baby spinach leaves and sprinkle them with sea salt. Let them sit for about 5 minutes to draw out moisture and enhance flavor.
  • Finely chop the spring onions, dill, parsley, and mint, then combine them in a large mixing bowl.
  • Squeeze the salted spinach to extract excess moisture using a clean cloth or paper towel.
  • Mix the squeezed spinach with the chopped herbs, crumbled feta, beaten egg, and dried oregano until well combined.
  • Cut the phyllo dough into squares, keeping the sheets covered with a damp towel.
  • Brush a square of phyllo with melted butter, layer a second sheet on top, and brush it again. Repeat this process.
  • Spoon about 2 tablespoons of the filling onto one end of the phyllo and roll it tightly, sealing edges with a bit of butter.
  • Set your air fryer to 350°F (180°C) and let it preheat for 3 minutes.
  • Place the rolls in the air fryer basket and cook for 7 minutes, flipping halfway until golden brown.
  • Transfer the cooked rolls to a wire rack and allow them to cool for a few moments.

Notes

Serve with tzatziki or your favorite dipping sauce for an extra burst of flavor.
