  • 2 cloves Garlic minced
  • 4 cups Vegetable or Chicken Broth low-sodium is preferred

For Creaminess

  • 1 cup Heavy Cream or coconut milk for dairy-free option

For Seasoning

  • 1 teaspoon Salt to taste
  • 1 teaspoon White Pepper
  • 1 tablespoon Fresh Lemon Juice

For Garnish

Directions

  • Prepare Asparagus: Wash, trim, and chop white asparagus into 1-inch pieces, reserving tender tips for garnish.
  • Sauté Aromatics: In a large pot, melt unsalted butter over medium heat. Sauté chopped onion and minced garlic for about 3 minutes until fragrant.
  • Cook Asparagus: Add chopped asparagus and broth to the pot. Bring to a simmer and cook until asparagus is tender, about 10 minutes.
  • Blend Soup: Transfer contents to a blender or use an immersion blender in the pot. Blend until smooth.
  • Finish Soup: Return blended mixture to the pot. Stir in heavy cream, warming gently. Season with salt, white pepper, and lemon juice.
  • Serve: Ladle the soup into bowls and garnish with chives or croutons.

Notes

Drizzle olive oil on top just before serving for an extra touch!
