  • 1 cup pearled farro
  • 2 tbsp extra virgin olive oil (divided)
  • 1 tsp salt (divided)
  • 1/2 tsp black pepper
  • 2 cups kale or spinach, chopped
  • 1/3 cup feta cheese, crumbled (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the cubed butternut squash with 1 tablespoon of olive oil, 1/2 teaspoon salt, and black pepper until well coated. Spread evenly on the baking sheet.
  3. Roast the squash for about 25 minutes until golden brown and crispy at the edges.
  4. Cook farro according to package instructions in boiling water (about 20-30 minutes) until tender; drain excess water.
  5. In a skillet over medium heat, add remaining olive oil and sauté chopped kale or spinach until wilted (about 3-5 minutes).
  6. In a serving bowl, combine roasted butternut squash, cooked farro, sautéed greens, and feta cheese if using. Toss gently to mix and serve warm or at room temperature.
