  • 2 lamb shanks (about 1.5 lbs each)
  • 3 tbsp white miso paste
  • 4 garlic cloves, minced
  • 1-inch fresh ginger, grated
  • 2 cups low-sodium vegetable broth
  • 2 carrots, chopped
  • 2 parsnips, chopped
  • 2 large Yukon Gold potatoes, peeled and cubed
  • 3 tbsp butter

Instructions

  1. Sear the lamb shanks in a skillet over medium-high heat for about 4 minutes per side until browned.
  2. In a bowl, whisk together the miso paste, garlic, ginger, and vegetable broth until smooth.
  3. Place the seared lamb into the slow cooker. Pour the miso mixture over the lamb and add chopped carrots and parsnips.
  4. Cover and cook on low for about 6 hours or until fork-tender.
  5. For the root mash, boil potatoes in salted water until fork-tender (about 15 minutes), then drain and mash with butter until creamy.
