  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz pasta (fusilli or penne)
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 2 tbsp freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the chicken by boiling water in a large pot. Add the chicken breasts and cook for 15-20 minutes until no longer pink. Drain and cool before slicing.
  2. In the same pot, bring water back to a boil; cook pasta according to package instructions until al dente (about 8-10 minutes). Drain and rinse under cold water.
  3. Chop the cherry tomatoes and dice the avocado. Tear spinach into smaller pieces.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. In a large mixing bowl, combine sliced chicken, cooked pasta, chopped veggies, and dressing. Toss gently.
  6. Serve immediately or store in the fridge for up to three days.
