  • 8 oz crumbled feta cheese
  • 1 large egg
  • 16 oz package phyllo dough, thawed

Instructions

  1. Sauté the diced onion in olive oil over medium heat until translucent (about 5 minutes). Add fresh spinach and cook until wilted (2-3 minutes).
  2. In a bowl, mix the sautéed vegetables with crumbled feta cheese, beaten egg, salt, and pepper.
  3. Preheat oven to 375°F (190°C). Layer three sheets of phyllo dough on a clean surface, brushing each with olive oil.
  4. Cut the layered phyllo into strips; place about two tablespoons of filling at one end of each strip. Fold diagonally to create triangles and continue folding down.
  5. Arrange the triangles on a parchment-lined baking sheet, brush tops with olive oil, and bake for 20-25 minutes until golden brown.
