Ingredients

Scale
  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 4 medium carrots, sliced
  • 3 medium potatoes (Yukon Gold or Russet), diced
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the vegetables into uniform sizes. Season the beef cubes generously with salt and pepper.
  2. In a skillet over medium-high heat, sear the beef cubes until browned on all sides, adding depth to the flavor.
  3. Transfer the seared beef to the slow cooker. Add onions, carrots, potatoes, garlic, Worcestershire sauce, thyme, and pour in the beef broth until just covered.
  4. Set your slow cooker on low for about 8 hours or high for approximately 4 hours. Avoid opening the lid during cooking to keep the heat trapped.
  5. Once cooked, taste and adjust seasoning as needed. For a thicker stew texture, mix cornstarch with water and add during the last hour of cooking.
  6. Serve hot in bowls alongside crusty bread or over rice.
