  • 1 ½ cups warm water (110°F/43°C)
  • 2 tsp instant yeast
  • ¼ cup extra virgin olive oil (plus more for drizzling)
  • 2 tbsp fresh rosemary (chopped)
  • 2 medium onions (thinly sliced)
  • 2 tsp kosher salt

Instructions

  1. In a large bowl, combine warm water and yeast. Let sit for 5 minutes until frothy.
  2. Mix in flour, salt, and olive oil until combined; don't worry about perfection.
  3. Knead the dough on a floured surface for about 5 minutes until smooth.
  4. Place in a greased bowl, cover with a damp cloth, and let rise in a warm spot for about 1 hour or until doubled in size.
  5. While the dough rises, sauté sliced onions in olive oil over medium heat for about 10 minutes until caramelized.
  6. Preheat oven to 400°F (200°C). Once risen, stretch dough onto a greased baking sheet, dimple the surface, top with sautéed onions and rosemary. Drizzle with olive oil and sprinkle with salt.
  7. Bake for 25 minutes or until golden brown.
