  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté chopped onion and garlic until fragrant (about 3 minutes).
  2. Transfer the sautéed mixture to the crockpot. Layer chicken breasts on top, seasoning generously with salt, pepper, and thyme.
  3. Add diced carrots and chopped kale to the crockpot, stirring gently.
  4. Pour in chicken broth over the ingredients.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. Once cooked, shred the chicken inside the crockpot using two forks and stir well before serving.
