  • 2 (6 oz) fresh salmon fillets
  • 4 cups mixed salad greens (arugula, spinach, romaine)
  • 1 cup cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat (400°F/200°C).
  2. Drizzle olive oil over salmon fillets; season with salt and pepper. Let marinate while preparing vegetables.
  3. Grill salmon skin-side down for about 5-6 minutes until easily flipped. Turn and grill for another 4-5 minutes until fully cooked.
  4. In a large bowl, combine mixed greens, cucumber, cherry tomatoes, and red onion; toss gently.
  5. Whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper in a small bowl. Drizzle over salad just before serving.
  6. Top the salad with grilled salmon fillets and serve.
