  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup extra-virgin olive oil
  • 2 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 pita breads
  • 1 cup tzatziki sauce

Instructions

  1. Cut chicken into bite-sized cubes. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken cubes and coat well. Cover and refrigerate for at least one hour or overnight.
  2. If using wooden skewers, soak them in water for 30 minutes. Thread marinated chicken onto skewers, leaving space between pieces.
  3. Heat grill to medium-high (375°F or 190°C).
  4. Place skewers on the grill and cook for 10-15 minutes until the internal temperature reaches 165°F (74°C). Turn occasionally for even cooking.
  5. Let skewers rest for five minutes before serving with warm pita bread and tzatziki sauce.
