Ingredients

Scale
  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 ½ cups granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ¾ cup unsalted butter, softened
  • 4 large eggs
  • 1 cup brewed espresso, cooled
  • ½ cup coffee liqueur (e.g., Kahlúa)
  • 8 oz mascarpone cheese
  • 1 cup heavy cream
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round cake pans.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream the softened butter and granulated sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in cooled espresso and coffee liqueur.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Divide the batter between prepared pans and bake for 25–30 minutes or until a toothpick inserted comes out clean. Allow layers to cool completely before frosting.
  6. For the frosting, whip mascarpone cheese and heavy cream until soft peaks form; gradually add powdered sugar and mix until smooth.
  7. Generously frost the cooled cake layers and serve.
