  • 8 oz fettuccine or penne pasta
  • 6 slices thick-cut bacon
  • 2 cups Brussels sprouts, halved
  • 1 cup butternut squash, peeled and cubed
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced

Instructions

  1. Cook pasta according to package instructions until al dente. Reserve 1 cup of pasta water and drain.
  2. In a skillet over medium heat, cook chopped bacon until crispy (about 8-10 minutes). Drain on paper towels.
  3. In the same skillet, sauté Brussels sprouts in bacon grease until tender and caramelized (5-7 minutes).
  4. Add butternut squash and garlic; stir until soft (8-10 minutes).
  5. Pour in heavy cream; gradually add reserved pasta water to reach desired consistency. Mix in Parmesan cheese until melted.
  6. Combine cooked pasta and bacon with the sauce; stir well and serve with additional Parmesan on top.
