  • 1 medium onion, chopped

  • 28 oz canned fire-roasted diced tomatoes
  • 4 cups low-sodium beef broth
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup shredded mozzarella cheese
  • 1 tbsp fresh basil, chopped (or 1 tsp dried)
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, sauté the ground beef or Italian sausage until fully cooked. Drain excess grease.
  2. Add the chopped onion and minced garlic; cook until softened and fragrant (about 5 minutes).
  3. Stir in the canned diced tomatoes and beef broth; bring to a simmer.
  4. Add broken lasagna noodles and cook until al dente according to package instructions.
  5. Mix in fresh basil, oregano, salt, and pepper; let simmer for another 10 minutes.
  6. Serve hot with shredded mozzarella on top to melt.
