Frog Eye Salad

Frog Eye Salad is a sweet and creamy pasta salad that is a staple at potlucks and family gatherings. The name comes from the small, round acini di pepe pasta that resembles tiny frog eyes. Mixed with fruit, marshmallows, and a sweet custard dressing, it walks the line between a side dish and a dessert.

This recipe requires some advance planning, as the main components need to chill overnight. However, the hands-on steps are simple and straightforward. The result is a cool, refreshing salad that is always a welcome addition to any spread.

Why is Frog Eye Salad a Must-Try?

Making a homemade custard sauce with egg yolks and fruit juice creates a rich, flavorful base that is much better than using instant pudding mix.

Chilling the pasta, fruit, and custard separately overnight is the secret to a thick, creamy salad that isn’t runny or watery.

Gently folding the ingredients together at the end is important to keep the delicate mandarin oranges and soft marshmallows intact.

Ingredients for Frog Eye Salad

• Acini di Pepe: These tiny pasta spheres are key to the classic look. If you cannot find them, orzo is the next best substitute, though the shape is different.

• Whipped Topping: A tub of frozen whipped topping (like Cool Whip) provides stability. You can use homemade sweetened whipped cream, but the salad will be looser and is best served immediately.

• Canned Fruit: Using canned fruit is recommended. Fresh pineapple contains an enzyme that can break down the custard and make the salad watery.

• Egg Yolks: The yolks give the custard sauce its signature yellow color and rich texture. Be sure to cook the custard thoroughly.

Exact quantities are in the recipe card below.

How to Make Frog Eye Salad

Step 1: Cook the Pasta and Chill

First, cook the acini di pepe pasta until tender. Drain it and rinse it under cold water to cool it down quickly. Place the cooked pasta in a covered bowl and let it chill in the refrigerator overnight.

Step 2: Make and Chill the Custard Sauce

Drain your canned fruits, making sure to save one cup of the juice. In a saucepan, whisk the juice with sugar, flour, and egg yolks. Cook this mixture while whisking until it becomes a thick, pudding-like sauce. Pour the custard into a bowl, cover it with plastic wrap touching the surface, and chill it overnight.

Step 3: Combine and Finish the Salad

The next day, all your components will be cold and ready. In a large bowl, mix the chilled pasta and custard. Gently fold in the drained fruit, mini marshmallows, and thawed whipped topping. Serve the finished salad right away or let it chill for another hour for the best flavor.

What to Serve with Frog Eye Salad

This salad is a complete dish on its own, often served as a sweet side dish with holiday meals or as a light dessert after a barbecue.

Expert Tips for Frog Eye Salad

The overnight chilling of the pasta, fruit, and custard is essential for the salad to have the correct thick and creamy texture. Do not skip this step.

For food safety, the egg-based custard must be cooked to a minimum internal temperature of 160°F (71°C).

Draining the fruit thoroughly, both initially and again before mixing, is key to preventing a watery salad.

For extra flavor and texture, you can fold in 1/2 cup of sweetened shredded coconut with the marshmallows.

How to Store and Freeze Frog Eye Salad

Store leftovers in an airtight container in the refrigerator for up to 3 days. The texture of the marshmallows will soften over time. Freezing is not recommended, as the custard and fruit will become watery upon thawing.

Frog Eye Salad Recipe FAQs

Why is my frog eye salad runny?

A runny salad is usually caused by two things: the custard sauce was not cooked long enough to thicken properly, or the canned fruit was not drained thoroughly. Be sure to let the fruit sit in a colander for a few minutes to remove as much liquid as possible.

Can I make this salad on the same day I plan to serve it?

It’s highly recommended to prepare the components the day before. The pasta, custard, and fruit need several hours, preferably overnight, to chill completely. Rushing this step will result in a thin, lukewarm salad.

Can I use fresh pineapple instead of canned?

It is best to use canned pineapple. Fresh pineapple contains an enzyme called bromelain which can prevent the custard from setting properly, resulting in a watery consistency. The canning process deactivates this enzyme.

Ingredients

  • 1 cup acini di pepe pasta 200g
  • 1 can pineapple tidbits in juice 20-ounce / 567g
  • 2 cans mandarin oranges in light syrup or juice 11-ounce / 312g
  • 3/4 cup granulated sugar 150g
  • 3 tablespoons all-purpose flour 24g
  • 2 large egg yolks
  • 2 cups miniature marshmallows 100g
  • 1 cup frozen whipped topping thawed, plus more for garnish, 90g
  • Maraschino cherries for garnish, optional

Instructions

  • Cook the acini di pepe pasta according to package directions. Drain well and rinse with cold water to stop the cooking. Transfer to a large bowl, cover, and refrigerate overnight.
  • Drain the pineapple and mandarin oranges, reserving 1 cup (240 ml) of the combined juices. Place the drained fruit in a covered container and refrigerate overnight.
  • In a medium saucepan off the heat, whisk together the reserved 1 cup of fruit juice, sugar, flour, and egg yolks until completely smooth.
  • Place the saucepan over medium-low heat. Cook, whisking constantly, until the mixture thickens to a pudding-like consistency, about 5-7 minutes. The custard should coat the back of a spoon.
  • For safety, check that the custard has reached an internal temperature of 160°F (71°C) with an instant-read thermometer. Remove from heat.
  • Pour the hot custard into a separate bowl. Press a piece of plastic wrap directly onto the surface to prevent a skin from forming. Refrigerate overnight.
  • The next day, remove the pasta, fruit, and custard from the refrigerator. Give the fruit a final drain in a colander to remove any liquid that has settled.
  • In a very large bowl, combine the chilled pasta and the chilled custard, stirring to coat.
  • Gently fold in the drained fruit, miniature marshmallows, and 1 cup of thawed whipped topping until just combined. Avoid overmixing.
  • Serve immediately or cover and chill for at least 1 hour before serving. Garnish individual servings with a dollop of whipped topping and a maraschino cherry, if using.
