Divinity Candy

Divinity is a classic, old-fashioned confection with a texture that is somewhere between a nougat and a meringue. Made from a hot sugar syrup whipped into egg whites, these cloud-like bites are light, airy, and melt in your mouth. This version includes toasted pecans for a pleasant, nutty crunch.

This recipe requires careful attention to temperature and timing, but the active work is done in about 30 minutes. The result is a beautiful homemade candy that is wonderful for sharing during the holidays or giving as a thoughtful gift.

Why is Divinity Candy a Must-Try?

Using a candy thermometer ensures the sugar syrup reaches the correct hard-ball stage, which is crucial for the candy’s final texture.

Beating the egg whites to stiff peaks before adding the syrup creates the light, voluminous structure that divinity is known for.

Pouring the syrup in a slow, steady stream allows it to cook the egg whites properly and incorporate fully without deflating the meringue.

Ingredients for Divinity Candy

• Egg Whites: Using room temperature egg whites helps them whip up to their fullest volume, creating a lighter candy.

• Light Corn Syrup: This ingredient is important as it prevents the sugar from crystallizing, ensuring a smooth, even texture.

• Pecans: Toasting the pecans for a few minutes before chopping deepens their nutty flavor. You can substitute walnuts or omit the nuts entirely.

• Candy Thermometer: A reliable candy thermometer is an essential tool for this recipe. Digital thermometers are often easier and faster to read.

• Vanilla Extract: Use pure vanilla extract for the best flavor. It is stirred in at the end to prevent the flavor from cooking off.

Exact quantities are in the recipe card below.

How to Make Divinity Candy

Step 1: Cook the Sugar Syrup

First, prepare a large baking sheet by lining it with parchment paper. In a medium saucepan, combine the sugar, water, corn syrup, and salt. Bring the mixture to a boil over medium heat, stirring occasionally, then allow it to cook undisturbed until it reaches 260°F (127°C) on a candy thermometer.

Step 2: Whip the Egg Whites

As the sugar syrup approaches its target temperature, place the room-temperature egg whites in the bowl of a stand mixer. Using the whisk attachment, beat the whites on high speed until they form stiff, glossy peaks.

Step 3: Combine and Beat the Candy

Once the syrup is at 260°F (127°C), turn the mixer to high and very carefully pour the hot syrup in a slow, thin stream into the whipping egg whites. Continue to beat the mixture on high speed for 6 to 10 minutes. The candy is ready when it has thickened, lost its shine, and can hold its shape.

Step 4: Shape and Set the Divinity

Quickly stir in the vanilla extract and toasted pecans by hand. Using two buttered spoons, immediately drop tablespoonfuls of the mixture onto your prepared baking sheet. Let the candy sit at room temperature for several hours or overnight until it is firm and dry to the touch.

What to Serve with Divinity Candy

Divinity is wonderful on its own. It makes a great addition to a holiday cookie platter or a homemade gift box of assorted treats.

Expert Tips for Divinity Candy

For the best results, make divinity on a day with low humidity. Excess moisture in the air can prevent the candy from setting properly and make it sticky.

The hot syrup, which reaches 260°F (127°C), cooks the egg whites as it is poured in, making them safe to eat.

To test if the candy is ready to be scooped, drop a small bit onto the parchment paper. If it holds a soft mound, it’s ready. If it flattens into a puddle, continue beating for another minute or two and test again.

You must work quickly once the candy is mixed, as it begins to set almost immediately.

How to Store and Freeze Divinity Candy

Store divinity in an airtight container at room temperature for up to 1 week. Place sheets of wax paper between layers to prevent sticking. Do not refrigerate, as the moisture will make the candy soft and sticky. This candy does not freeze well.

Divinity Candy Recipe FAQs

Why is my divinity sticky?

Stickiness is almost always caused by humidity. It is best to make divinity on a dry, cool day. The candy is hygroscopic, meaning it absorbs moisture from the air, which can prevent it from setting properly.

Why didn’t my divinity set?

There are two common reasons. Either the sugar syrup did not reach the required 260°F (127°C), or the mixture was not beaten long enough after the syrup was added. Beating until the mixture loses its gloss and holds its shape is key.

Can I make divinity without a stand mixer?

While possible with a powerful electric hand mixer, it is very difficult and not recommended. You need to pour a stream of dangerously hot syrup with one hand while keeping the mixer steady and running on high with the other. A stand mixer makes the process much safer and easier.

Ingredients

  • 2 large egg whites at room temperature
  • 2 ¼ cups granulated sugar 450g
  • ½ cup water 120ml
  • ½ cup light corn syrup 120ml
  • ⅛ teaspoon salt
  • 1 teaspoon vanilla extract 5ml
  • ½ cup chopped pecans toasted, 60g

Instructions

  • Line a large baking sheet with parchment paper.
  • In a 2 to 3-quart saucepan, combine the granulated sugar, water, light corn syrup, and salt. Attach a candy thermometer to the side of the pan.
  • Cook the mixture over medium heat, stirring until the sugar dissolves. Continue to cook, without stirring, until the thermometer registers 260°F (127°C).
  • While the syrup heats, add the room-temperature egg whites to the bowl of a stand mixer fitted with the whisk attachment. When the syrup reaches about 250°F (121°C), begin beating the egg whites on high speed until stiff peaks form.
  • Once the syrup reaches 260°F (127°C), remove it from the heat. With the mixer on high speed, very slowly and carefully pour the hot syrup in a thin, steady stream down the side of the bowl into the egg whites.
  • Continue beating on high speed until the mixture becomes very thick, loses its glossy sheen, and starts to hold its shape, about 6 to 10 minutes. The candy should pull away from the sides of the bowl.
  • Turn off the mixer and quickly stir in the vanilla extract and toasted pecans.
  • Working fast, use two buttered spoons to drop rounded tablespoon-sized mounds of the candy onto the prepared baking sheet.
  • Allow the candy to set at room temperature until it is firm and no longer sticky to the touch. This can take anywhere from 2 hours to overnight, depending on humidity.
