  • ½ cup blackberry jam
  • 1 cup heavy whipping cream
  • ¼ cup powdered sugar
  • ½ cup fresh blackberries

Instructions

  1. Preheat oven to 350°F (175°C) and grease two round cake pans.
  2. In a bowl, whisk flour, cocoa powder, baking powder, baking soda, and salt together.
  3. In another bowl, mix eggs, sugar, oil, and vanilla until smooth.
  4. Gradually combine dry ingredients with wet mixture until just blended.
  5. Pour batter into prepared pans and bake for 30–35 minutes; cool before removing from pans.
  6. Whip cream until soft peaks form; gradually add powdered sugar and gently fold in blackberries.
  7. Layer jam on one cake layer, top with half the cream filling, then place the second layer on top and finish with remaining cream.
