  • 2 tablespoons olive oil
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice the eggplant into fry-shaped pieces about half an inch thick.
  3. Toss the eggplant slices with salt and let them sit for 15 minutes to draw out moisture.
  4. Pat the slices dry, then drizzle with olive oil and toss until evenly coated.
  5. In a separate bowl, mix panko breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper. Coat each eggplant slice in this mixture.
  6. Arrange the coated fries in a single layer on the baking sheet and bake for 25-30 minutes until golden brown.
