  • 1.5 pounds boneless, skinless chicken breasts (about 3 breasts)
  • 6 slices thick-cut bacon
  • 1 cup ranch dressing
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 2 green onions, sliced
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish with nonstick spray.
  2. Cook rotini pasta in salted boiling water until al dente; drain and reserve a splash of pasta water.
  3. In a skillet, cook seasoned chicken breasts over medium heat until golden brown and cooked through (about 12 minutes). Chop into bite-sized pieces.
  4. In the same skillet, fry bacon until crispy; crumble into small pieces.
  5. In a large bowl, mix cooked pasta, chicken, bacon, ranch dressing, heavy cream, garlic powder, and half the cheddar cheese until well combined.
  6. Pour mixture into the prepared baking dish, topping with remaining cheese and sliced green onions. Bake for 25-30 minutes or until bubbly and golden brown.
