Chicken Vesuvio is a classic Italian-American dish from Chicago. It features bone-in chicken and potato wedges roasted together in a simple, flavorful sauce of white wine, garlic, and herbs.
This one-pot meal comes together in about an hour and fifteen minutes. It’s a straightforward recipe that delivers a satisfying and complete dinner with minimal cleanup.
Why is Chicken Vesuvio a Must-Try?
Searing the chicken skin first creates a crisp texture and renders fat for browning the potatoes.
Deglazing the pot with white wine lifts all the flavorful browned bits, which become the foundation of the rich pan sauce.
Finishing the sauce with butter adds a smooth, velvety consistency and enriches the final flavor.
Ingredients for Chicken Vesuvio
• Chicken: Bone-in, skin-on thighs are traditional and stay very moist. You can substitute with bone-in chicken breasts, but you may need to adjust the cooking time.
• Potatoes: Small red or Yukon Gold potatoes work well because their waxy texture helps them hold their shape during cooking.
• White Wine: Use a dry white wine you would enjoy drinking, like a Sauvignon Blanc or Pinot Grigio. Avoid anything labeled ‘cooking wine’.
• Artichoke Hearts: Frozen artichoke hearts are convenient. If using canned, be sure to drain and rinse them well before adding them to the sauce.
• Herbs: Dried oregano and thyme are fine, but you can use fresh herbs if you have them. Use about 1 tablespoon of each, chopped.

How to Make Chicken Vesuvio
Step 1: Sear the Chicken and Potatoes
First, brown the chicken thighs in a hot, oven-safe pot to get the skin crisp. Set the chicken aside and use the same pot to brown the halved potatoes until they have a nice golden color.
Step 2: Build the Sauce
Next, create the sauce right in the same pot. Sauté garlic briefly, then pour in white wine to scrape up any flavorful bits from the bottom. Stir in chicken broth and dried herbs to complete the sauce base.

Step 3: Bake and Finish
Return the chicken to the pot, cover it, and bake until the chicken is cooked through. To finish, remove the chicken and potatoes, then simmer the artichoke hearts in the sauce on the stovetop and swirl in butter for richness.
What to Serve with Chicken Vesuvio
Chicken Vesuvio is a complete meal on its own. For something extra, a simple green salad or some crusty bread to soak up the sauce would be a great addition.
Expert Tips for Chicken Vesuvio
Food Safety: Always ensure chicken is fully cooked. The internal temperature should reach 165°F (74°C) when measured with a meat thermometer in the thickest part of the thigh, avoiding the bone.
Potatoes: If your potatoes are very small, you can leave them whole. If they are larger than a golf ball, cut them into quarters to ensure they cook at the same rate as the chicken.
Wine Substitute: If you prefer not to use wine, you can replace it with an equal amount of chicken broth plus a tablespoon of lemon juice or white wine vinegar for acidity.
How to Store and Freeze Chicken Vesuvio
Store leftovers in an airtight container in the refrigerator for up to 3 days. This dish does not freeze well, as the potatoes can become grainy. Reheat gently in a covered skillet over low heat or in the microwave.

Chicken Vesuvio Recipe FAQs
Can I make this with boneless chicken?
Yes, you can use boneless, skinless chicken thighs or breasts. Sear them for a shorter time and reduce the baking time to 15-20 minutes. Always check for an internal temperature of 165°F (74°C) to ensure they don’t overcook.
What if I don’t have an oven-safe pot or Dutch oven?
You can sear the chicken and potatoes and make the sauce in a regular skillet. Then, transfer everything to a 9×13-inch baking dish, cover tightly with foil, and bake as directed.
Can I add other vegetables?
Certainly. Green peas are a common addition; add 1/2 cup of frozen peas with the artichoke hearts. Sliced mushrooms or bell peppers could also be added with the potatoes.

Chicken Vesuvio
Ingredients
- 3 tablespoons olive oil 45 ml
- 4 bone-in skin-on chicken thighs, about 2 lbs / 900g
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 pounds small potatoes halved, about 680g
- 4 cloves garlic minced
- 3/4 cup dry white wine 180 ml
- 3/4 cup chicken broth 180 ml
- 1 1/2 teaspoons dried oregano
- 1 teaspoon dried thyme
- 1 cup frozen artichoke hearts thawed, about 5 oz / 140g
- 2 tablespoons unsalted butter 28g
Instructions
- Preheat your oven to 450°F (232°C). Pat the chicken thighs dry with paper towels and season them all over with salt and pepper.
- Heat the olive oil in a large Dutch oven or other heavy, oven-safe pot over medium-high heat. Place the chicken skin-side down and sear until deep golden brown, about 5-6 minutes. Flip and cook for another 3-4 minutes. Transfer the chicken to a plate.
- Add the halved potatoes to the pot, placing them cut-side down if possible. Cook for 8-10 minutes, stirring occasionally, until they are browned in spots.
- Stir in the minced garlic and cook until fragrant, about 30 seconds. Pour in the white wine to deglaze, using a wooden spoon to scrape up any browned bits from the bottom of the pot.
- Add the chicken broth, dried oregano, and thyme. Return the chicken thighs to the pot, nestling them among the potatoes. Bring the liquid to a simmer.
- Cover the pot and transfer it to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through. An instant-read thermometer inserted into the thickest part of the thigh should register 165°F (74°C).
- Carefully remove the pot from the oven. Transfer the chicken and potatoes to a serving platter.
- Place the pot back on the stovetop over medium-high heat. Add the thawed artichoke hearts to the sauce and simmer until heated through, about 4 minutes.
- Remove the pot from the heat. Stir in the butter until it melts completely and the sauce is smooth. Pour the sauce and artichokes over the chicken and potatoes before serving.
