Caldo de pollo is a traditional Latin American chicken soup known for its large pieces of vegetables and rich, clear broth. Using a whole chicken creates a deep flavor base that cannot be matched by carton stock.
This recipe requires a long simmer, making it a good choice for a relaxed afternoon. The addition of chayote, corn, and fresh mint gives the soup a distinct, fresh taste.
Why is Caldo de Pollo a Must-Try?
Simmering bone-in chicken slowly extracts collagen and flavor for a richer broth.
Removing the chicken breasts early prevents the white meat from drying out during the long cook time.
Staggering the vegetables ensures the potatoes and squash hold their shape rather than turning to mush.
Ingredients for Caldo de Pollo
• Whole chicken: Buying a whole chicken and cutting it into parts is usually cheaper. You can also buy a pre-cut whole chicken.
• Chayote: This is a firm, pale green squash found in the produce section. You may want to wear gloves while peeling it, as it can release a sticky sap.
• Zucchini: Traditional recipes often use round squash known as güicoy. Small zucchini are a convenient and widely available substitute.
• Mint and cilantro: Fresh herbs are vital for the signature flavor of the broth. Dried herbs will not work here.

How to Make Caldo de Pollo
Step 1: Make the chicken broth
Start by building the flavor base. Simmer the chicken parts with onion, garlic, peppercorns, and a bay leaf. Taking the breasts out after 30 minutes keeps them tender while the dark meat and bones continue to enrich the stock.
Step 2: Add the hardy vegetables
After the broth develops, add the vegetables that need more time to soften. Carrots, potatoes, and chayote go in first so they can cook through without breaking down completely.

Step 3: Finish with quick-cooking ingredients
Corn and zucchini cook very quickly in the hot liquid. Add them near the end along with the fresh cilantro and mint. This preserves the bright green color and fresh flavor of the herbs.
Step 4: Shred and serve
Discarding the bones makes the soup easier to eat. Serve the vegetables and chicken on a plate with rice, and ladle the hot broth into a separate bowl. Squeeze fresh lime juice over everything.
What to Serve with Caldo de Pollo
Serve with warm corn tortillas and a side of fresh salsa for dipping the chicken.
Expert Tips for Caldo de Pollo
Always verify that poultry reaches a safe internal temperature of 165°F (74°C) using a meat thermometer.
If your pot is too small, you can use slightly less water, but make sure the chicken is fully submerged.
Skim off any excess fat from the top of the broth before adding the vegetables if you prefer a lighter soup.
How to Store and Freeze Caldo de Pollo
Store leftover soup in an airtight container in the refrigerator for up to 4 days. Freeze the broth and meat for up to 3 months, though the vegetables may become mushy when thawed. Reheat gently on the stove until the chicken reaches 165°F (74°C).

Caldo de Pollo Recipe FAQs
Do I have to use a whole chicken?
A whole chicken provides the right mix of bones, skin, and meat for a rich broth. You can use an equal weight of bone-in, skin-on chicken legs and thighs if you prefer.
Can I eat the chayote seed?
Yes, the flat seed inside the chayote is soft and edible when cooked. You can leave it intact or scoop it out before chopping.
How do I stop the broth from getting cloudy?
Keep the heat at a gentle simmer rather than a rolling boil. You can also skim any foam that rises to the surface during the first 30 minutes of cooking.
