  • 1 lb scallops (fresh or frozen)
  • 8 oz spaghetti or fettuccine
  • 4 cloves garlic (minced)
  • 5 tbsp unsalted butter (divided)
  • Zest of 1 lemon
  • 2 tbsp fresh parsley (chopped)
  • Salt and pepper (to taste)

Instructions

  1. Cook pasta in salted boiling water according to package instructions until al dente. Reserve ½ cup pasta water before draining.
  2. Pat dry scallops with paper towels and season with salt and pepper.
  3. In a skillet over medium-high heat, melt 2 tbsp of butter. Add scallops in a single layer and sear for 2-3 minutes on each side until golden brown. Remove and set aside.
  4. In the same skillet, reduce heat to medium, add remaining butter and minced garlic, sautéing until fragrant, about 1 minute.
  5. Toss drained pasta into the skillet with garlic butter, adding reserved pasta water gradually until reaching desired consistency.
  6. Stir in lemon zest, parsley, and seared scallops. Adjust seasoning if needed before serving.
