  • 2 medium fresh lemons (zest and juice)

Instructions

  1. Rinse the rice under cold water until clear. In a saucepan, combine the rinsed rice with 2 cups of water and a pinch of salt. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 15-20 minutes until the water is absorbed.
