  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/2 cup fresh lemon juice (from about 2 medium lemons)
  • 1/4 cup extra virgin olive oil
  • 2 tbsp fresh thyme, chopped (or 1 tbsp dried thyme)
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, thyme, salt, and pepper.
  2. Place chicken in a resealable bag or dish and pour marinade over it. Seal tightly and refrigerate for at least 30 minutes.
  3. Preheat grill to medium-high heat (375°F) or oven to 400°F.
  4. Remove chicken from marinade and discard the marinade. Grill for 6-7 minutes per side until internal temperature reaches 165°F (74°C) or bake for about 25-30 minutes.
  5. Let chicken rest for 5 minutes before slicing and serving.
