Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh lemon juice (approx. 2 lemons)
  • 1 cup couscous
  • 1.5 cups water or vegetable broth
  • 1 cup bell peppers, diced
  • 1 cup cucumber, diced
  • 3 tbsp extra virgin olive oil

Instructions

  1. Marinate the chicken by whisking together lemon juice, olive oil, chopped dill, salt, and pepper in a bowl. Let it sit for at least 30 minutes.
  2. Cook couscous according to package instructions: bring water or broth to a boil, stir in couscous, cover, and let sit for about 5 minutes.
  3. Grill chicken over medium-high heat for about 6-7 minutes per side or until fully cooked (165°F).
  4. While the chicken rests, chop the vegetables into bite-sized pieces.
  5. Assemble bowls by layering couscous, sliced chicken, and veggies on top.
  6. Drizzle with a dressing made from mixing any leftover marinade with honey before serving.
