  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp Cajun seasoning
  • 3 tbsp olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp dried basil
  • 1 tsp dried oregano

Instructions

  1. Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a bowl, combine Cajun seasoning, olive oil, and lemon juice. Toss chicken in marinade and let sit for 15 minutes.
  3. Arrange marinated chicken in the baking dish and bake for 20-25 minutes until golden brown and cooked through.
  4. While the chicken bakes, sauté minced garlic in a saucepan over medium heat until fragrant. Add heavy cream and simmer before stirring in Parmesan cheese until melted.
  5. Once chicken is done, cut it into bite-sized pieces and toss into the Alfredo sauce.
