  • 4 boneless skinless chicken breasts (about 1.5 lbs)
  • 8 oz pasta (spaghetti or penne)
  • 1 lb fresh asparagus
  • 1 cup crumbled feta cheese
  • 3 tbsp harissa paste
  • 3 tbsp olive oil (divided)
  • 1 cup heavy cream
  • 3 garlic cloves (minced)
  • Zest and juice of 1 lemon

Instructions

  1. Preheat the oven to 400°F (200°C). Spread asparagus on a baking sheet, drizzle with 1 tbsp olive oil, and season with salt and pepper.
  2. Season chicken breasts with salt, pepper, and lemon juice. Heat remaining olive oil in a skillet over medium-high heat and cook chicken for about 6 minutes per side until golden brown.
  3. Roast the asparagus in the preheated oven for 15-20 minutes until tender.
  4. Cook pasta according to package instructions until al dente.
  5. In another saucepan over medium heat, combine heavy cream, minced garlic, feta cheese, harissa paste, lemon zest, and juice. Stir until melted and creamy.
  6. Drain pasta and return it to the pot. Slice cooked chicken into bite-sized pieces and toss with roasted asparagus into the pasta. Pour sauce over everything, mix well, and serve hot.
