  • 1 lb carrots, peeled and chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 4 cups low-sodium vegetable broth
  • 1 cup coconut milk (light if desired)
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 tbsp olive oil

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté the diced onion until translucent (about 5 minutes). Add minced garlic and grated ginger; cook for another minute until fragrant.
  2. Stir in the chopped carrots along with cumin and coriander. Mix well to coat the carrots with spices.
  3. Pour in the vegetable broth to cover the veggies. Bring to a boil, then reduce heat and let simmer uncovered for about 20 minutes or until the carrots are tender.
  4. Blend the soup using an immersion blender or transfer to a blender until smooth.
  5. Return the soup to the pot; stir in coconut milk until well combined. Heat through before serving.
