  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 can (15 oz) pinto beans, rinsed and drained
  • 1 cup diced bell peppers
  • ½ cup finely diced red onion
  • ¼ cup chopped fresh cilantro
  • 4 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the wild rice according to package instructions until tender but chewy.
  2. While the rice cooks, rinse and drain all canned beans thoroughly.
  3. Dice the bell peppers and finely chop the red onion and cilantro.
  4. In a bowl, whisk together olive oil and lemon juice; season with salt and pepper.
  5. In a large mixing bowl, combine cooled wild rice, beans, diced veggies, and dressing; mix well.
  6. Cover and chill in the refrigerator for at least 30 minutes before serving.
