Ingredients

Scale
  • 4 medium beets (about 1 lb), scrubbed
  • 2 large oranges, segmented
  • 1 grapefruit, segmented
  • 4 oz crumbled feta cheese
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste
  • Fresh herbs (parsley or mint) for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Wrap each beet in aluminum foil and roast on a baking sheet for 45-60 minutes until tender.
  2. While beets are roasting, peel and segment the oranges and grapefruit.
  3. Once the beets are cool enough to handle, peel them under running water; the skins should slide off easily.
  4. Cut roasted beets into slices or cubes.
  5. In a large bowl, combine the beet pieces with citrus segments.
  6. Drizzle with olive oil and balsamic vinegar; toss gently to combine.
  7. Top with crumbled feta cheese and fresh herbs before serving.
