  • 1/2 cup freshly grated Parmesan cheese
  • 1/3 cup extra virgin olive oil
  • 2 garlic cloves
  • 2 cups seasonal vegetables (bell peppers, zucchini, cherry tomatoes)
  • 1/4 cup pine nuts

Instructions

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Drain without rinsing.
  2. In a food processor, blend basil, garlic, pine nuts, and Parmesan until finely chopped. Gradually add olive oil while processing until smooth.
  3. In a skillet, heat olive oil over medium heat. Sauté chopped vegetables for about five minutes until tender but crisp.
  4. Combine cooked pasta with sautéed vegetables in the skillet. Add pesto and toss to coat evenly.
