Ingredients

  • 1 cup quinoa
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts, chopped
  • 1/2 cup freshly squeezed orange juice
  • 3 tbsp extra virgin olive oil
  • 1 tbsp honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine rinsed quinoa with 2 cups of water or vegetable broth. Bring to boil, reduce heat, cover, and simmer for about 15 minutes until liquid is absorbed. Fluff with a fork and let cool.
  2. In a bowl, whisk together orange juice, olive oil, honey/maple syrup, salt, and pepper.
  3. In a large bowl, mix cooled quinoa with cranberries and walnuts. Pour dressing over the salad and toss gently.
  4. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
