  • 1 cup shredded carrots
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, shredded
  • Salt and pepper to taste

Instructions

  1. Wash broccoli thoroughly and chop into bite-sized florets. Peel and thinly slice carrots. Dice the onion and mince the garlic.
  2. In a large pot over medium heat, melt 2 tablespoons of butter. Sauté onions until translucent (about 5 minutes), then add garlic until fragrant.
  3. Add broccoli and carrots to the pot; pour in vegetable broth until submerged. Bring to a gentle boil, then simmer for about 10 minutes until veggies are tender.
  4. Use an immersion blender to puree the soup until smooth. If using a traditional blender, do so carefully in batches.
  5. Gradually stir in heavy cream while keeping heat low; let it simmer for another 5 minutes.
  6. Remove from heat and stir in shredded cheddar cheese until melted completely. Season with salt and pepper as desired.
