  • 2 lbs beef bones (marrow or knuckle)
  • 10 cups filtered water
  • 2 tbsp apple cider vinegar
  • 1 large onion, quartered (skin on)
  • 2 whole carrots
  • 2 whole celery stalks
  • 4 garlic cloves, smashed (unpeeled)
  • 2 tsp dried thyme or 3 sprigs fresh thyme
  • 2 bay leaves

Instructions

  1. Rinse beef bones under cold water and pat dry. For enhanced flavor, roast them at 400°F for about 30 minutes.
  2. Add beef bones, water, apple cider vinegar, onion, carrots, celery, garlic, thyme, and bay leaves to the Instant Pot.
  3. Seal the lid and set the valve to 'Sealing.' Select 'Soup' or 'Manual' mode and cook on high pressure for 120 minutes.
  4. Allow natural pressure release for one hour before manually releasing any remaining pressure.
  5. Strain the broth through a fine-mesh sieve into another pot or bowl.
  6. Let it cool before transferring to jars; refrigerate for up to five days or freeze for later use.
