  • 2 cups cooked pulled pork
  • 1.5 cups shredded sharp cheddar cheese

  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash potatoes, pierce them with a fork, rub with olive oil, and sprinkle with salt. Place directly on the oven rack.
  3. Bake for 45 minutes until tender. Let cool slightly, then slice in half and scoop out some flesh, leaving a thin border.
  4. Brush potato skins with more olive oil, fill generously with pulled pork, and top with cheddar cheese.
  5. Return to the oven for another 15-20 minutes until cheese is bubbly and golden.
