  • 12 ounces rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • ½ small red onion, finely chopped
  • 1 bell pepper (any color), diced
  • 1 cup mayonnaise
  • ½ cup sour cream
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions until al dente (about 8-10 minutes). Drain and rinse under cold water.
  2. While pasta cools, chop cherry tomatoes, cucumber, red onion, and bell pepper into bite-sized pieces.
  3. In a bowl, mix together mayonnaise, sour cream, Dijon mustard, salt, and pepper until smooth.
  4. In a large bowl, combine cooled pasta with chopped vegetables. Pour in the dressing and toss gently to coat evenly.
  5. Cover and chill in the fridge for at least one hour before serving to allow flavors to meld.
