  • 250g ripe tomatoes (heirloom or vine-ripened)
  • 2 hard-boiled eggs
  • 100g Niçoise olives
  • 150g canned tuna (in olive oil)
  • 3 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • Fresh basil leaves for garnish

Instructions

  1. 1. Boil the eggs: Place eggs in a pot covered with cold water. Bring to a boil, then cover and remove from heat; let sit for 10-12 minutes. Cool under cold water, then peel.
  2. 2. Prepare the green beans: In another pot of salted boiling water, blanch green beans for 3-4 minutes until tender-crisp. Drain and plunge into ice water to preserve color.
  3. 3. Chop the vegetables: Dice tomatoes and quarter hard-boiled eggs.
  4. 4. Assemble the salad: On a serving platter, layer green beans, diced tomatoes, olives, tuna chunks, and egg slices.
  5. 5. Dress it up: Whisk together olive oil and red wine vinegar with salt and pepper; drizzle over the salad.
